2lb cauliflower florets
1 cup fat free sour cream
3 tsp xanthan gum
2 tsp baking powder
- Boil 4 quarts of water with salt over high heat. Once the water starts to boil, reduce heat to medium to bring the water to a simmer. Add the potatoes and leave in a pot until fully cooked through. Drain in a colander and add to blender.
- Separately, cook cauliflower in a boiling pot of water. Drain in a colander and add to blender.
- Add baking powder, spices, 1/2 cup fat-free sour cream, and guar gum to Ninja blender and pulse blend until smooth.
- Service with remaining fat-free sour cream and any preferred spices.
